Queensland Sour with Captain Morteton Silver Spiced Pineapple Rum
Ingredients:
- 1.5 oz Captain Morteton Silver Spiced Pineapple Rum
- ½ oz lime juice
- ½ oz simple syrup
- ½ large pasteurised egg white
Instructions:
- Combine rum, lime juice, simple syrup, and egg white in a cocktail shaker, shaker bottle, or screw-top jar.
- Shake vigorously until the mix is foamy.
- Add a few ice cubes and shake again until well-chilled.
- Place a large ice cube into a double old-fashioned glass, strain the mix over it, and garnish with a bright slab of citrus peel.
Notes: The proteins in the egg white capture air bubbles, creating a luxurious, velvety foam. The "dry shake" (before adding ice) allows for vigorous mixing without diluting the drink. The final result is a cloudy, thick drink with a whipped cream-like head after sitting for a minute. Perfectly balanced and visually appealing, this cocktail is as delightful as the person enjoying it.
