Pineapple Spiced Rum Punch with Captain Moreton Pineapple Spiced Rum (Maple Barrel Finished)
Ingredients:
- 30ml Captain Moreton Pineapple Spiced Rum (Maple Barrel Finished)
- 15ml fresh lime juice
- 15ml falernum
- 60ml strongly brewed black tea
Method:
Falernum Preparation:
- Remove the peel of one lime (minimising pith) and cover with 150g of caster sugar. Muddle lightly to infuse the sugar with lime oils.
- Add a 50 cent piece-sized slice of ginger, 2 cracked allspice berries, one clove, and a grating of nutmeg.
- Add 150ml of hot water to the spices, sugar, and lime zest. Stir to dissolve the sugar and leave to steep. Strain before use.
Tea Preparation:
- Brew the black tea strongly to give the drink tannic structure. Cool the tea before use. (If you refrigerate black tea to soon, it will go cloudy.)
Assembling the Drink:
- Combine 30ml Captain Moreton Pineapple Spiced Rum, 15ml fresh lime juice, 15ml falernum, and 60ml strongly brewed black tea in a glass.
- Taste and adjust sweetness, acidity, and dilution if needed.
- Add ice and finish with a grating of nutmeg.
For Larger Batches:
- Prepare a large ice block in an ice-cream container or cake mould.
- Combine all liquid ingredients in a punch bowl and adjust the flavours as needed.
- Add the large ice block, lime wheels, and sprigs of fresh mint for visual appeal.
- Finish with a grating of nutmeg to enhance the aromatics. Enjoy!
