Cast your imagination back to 1826. The Moreton Bay settlement, overseen by Captain Logan, was flourishing despite the challenging conditions. Under the Captain’s command eighty five acres had been cleared and sugar cane was growing. Captain Logan embarked on an extensive program of building. Hospital, surgeon’s quarters, gaol, barracks for convicts and soldiers, Commissariat Stores and the Windmill were commenced. Brisbane owes a lot to the foundations laid by the Captain of Moreton Bay.

NAVY STRENGTH: 57% ABV use 20ml if a recipe calls for 30ml, and dilute until you are happy.

 

Tasting Notes

A fine example of what a real contemporary spiced rum should be like. Beginning with vegative cane notes and a subtlety imbued by Orris root and Orange, the palate is then assaulted with nuanced baking spices, beginning with pimento, then into more delicate hints of cinnamon and nutmeg. Vanilla lengthens the back palate, drawing the oak characteristics forward, to conclude on an assertive note of black

pepper.

 

Supremely tasty with a highly spiced ginger beer, or alternatively freshly pressed apple juice, the spirit also possesses the complexity to work in an old fashioned, or other tropical cocktails.

 

Spiced Old Fashioned with Captain Moreton Spiced Rum

The Spiced Old Fashioned is the rum lover's quintessential fall or winter go-to drink. Made with spiced rum, spiced maple syrup, and an array of bitters, this seasonal favourite is rich, bold, and delectable. It contains dynamic tasting notes of cinnamon, oak, and butter, perfect for a cosy night in, or seasonal cocktail hour.
 

Ingredients:

  • 2 oz Captain Moreton Spiced Rum
  • 0.50 oz Spiced Maple Syrup*
  • 2 dashes Black Walnut Bitters
  • 1 dash Angostura Bitters
     

Garnish:

  • Cinnamon Stick
  • Orange Swath
     

Instructions:

  • Create the Syrup: Combine 1 cup of maple syrup (Grade A preferred), 1/2 cup of water, 1 cinnamon stick, 3 cloves, 2 cardamom pods, 1 star anise, 2 slices of fresh ginger, and 1 peeled orange in a pot. Bring to a boil, then cool to room temperature. Strain and refrigerate.

  • Combine the Ingredients: In a mixing glass with ice, combine 1/2 ounce of the spiced maple syrup with 2 oz Captain Moreton Spiced Rum, 2 dashes Black Walnut Bitters, and 1 dash Angostura Bitters. Stir well.

  • Transfer Ingredients: Strain the mixture into a rocks glass over an oversized ice cube.

  • Garnish: Pinch an orange peel over the cocktail to release its zest, then add a cinnamon stick for an aromatic touch. Enjoy!
     

Spiced Maple Syrup: Combine 1 cup of maple syrup (Grade A preferred), 1/2 cup of water, 1 cinnamon stick, 3 cloves, 2 cardamom pods, 1 star anise, 2 slices of fresh ginger, and 1 peeled orange. Bring everything to a boil in a pot, cool to room temperature, strain, and refrigerate.
